Sticky Spicy Ribs

Yummy and so easy and not too spicy at all!

3-4  lbs pork ribs
1/4 cup molasses
1/4 cup yellow mustard
1/4 cup soy sauce
1/4 cup red wine vinegar
2 teaspoons Tabasco sauce

Put the ribs in the pot

In a small bowl mix together everything else and pour it over the ribs

Cook on slow cook low for 8 hours

Easy Shepherd's Pie

This is from the Ninja cookbook and I followed it exactly (well I may have added more than a cup of shredded cheese, but you get the idea!!!)

Ingredients:

1 ½ lbs ground turkey
2 teaspoons steak seasoning
1 bag (12 ounces) frozen veggies (corn peas carrots green beans)
2 tablespoons flour
6 cups prepared mashed potatoes
1 cup shredded cheddar cheese

On stovetop high brown the turkey and steak seasoning


While that is browning prepare your mashed potatoes on the stovetop

When turkey is brown add veggie and flour and stir




Top mixture with the mashed potatoes


Then top with the cheese


Turn Ninja to oven and 350 degrees

Cook for 20 minutes

Tuscan Chicken & Beans

Ingredients:

1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, chopped
1 ½ teaspoons Oregano seasoning
1 can (14.5 oz) diced tomatoes
1can cream of chicken soup
1 can (15 oz) white beans, drained
¼ teaspoon black pepper
4 skinless boneless chicken breast
2 cups fresh spinach

Turn Ninja to stovetop high and add oil, onions, garlic and oregano to the pot and cook until onions are translucent


Stir in tomatoes, chicken soup, beans and pepper


Add chicken and turn Ninja to low


Cook for 20 minutes then add spinach and cook 5 more minutes or so



Super yummy!!!

Cheese Tortellini Casserole

I made this tonight and it was SOOOOOO delicious!!!

Cheese Tortellini Casserole

Ingredients:

1 ½ lbs ground turkey
2 (9oz) packages cheese tortellini
1 (28oz) can diced tomatoes
1 (8oz) can tomato sauce
3 cups shredded mozzarella cheese
½ of a medium onion, chopped
2 cloves garlic, chopped
2 teaspoons olive oil
Salt, pepper and any other spices to taste

Turn Ninja to stovetop high

Add olive oil, onions and garlic and sauté until onions are translucent

Add ground turkey, salt, pepper and I used creole seasoning, and brown the turkey


Add the tomato sauce and diced tomatoes and stir


Add the tortellini and 1 ½ cups of the cheese and stir


Top with the remaining 1 ½ cup cheese


Turn Ninja to oven and set at 350, put the lid on and bake for about 30 miutes



Let it sit a few minutes before serving

Garlic, Lemon & Thyme Chicken

Ingredients:

1 whole chicken
4 lemons
Garlic, chopped
Thyme
Steak seasoning
Garlic powder
Salt
Pepper

First remove insides of chicken, rinse and dry with paper towels


Slice 2 ½ of the lemons, layer the bottom of the Ninja with all but about 5 slices of lemon


On top of the lemons add some garlic, thyme, salt, pepper, garlic powder and steak seasoning (I don’t measure, just added what seemed good)


In a small bowl, mixed more chopped garlic (I just used whatever amount looked good), steak seasoning, salt, pepper, garlic powder and thyme

Quarter the other 1 ½ lemons and stuff inside the chicken along with the spice mix from the bowl


Coat chicken with steak seasoning and put in the pot.

Add the remaining lemon slices to the chicken and add garlic powder, salt, pepper and thyme


Set the Ninja on crockpot low and cook for 8 hours.



I served it with broccoli cheddar rice and mixed veggies




Sausage, Egg, Hashbrown and Cheese Casserole

I made this breakfast casserole last night for dinner and it was delicious!  I got the recipe from Rhonda Sullivan Cilley, who is a member of a Ninja Facebook group!  I followed the recipe exactly except I used a different sausage and different tots!

Ingredients:

9 large eggs
¾ cups milk
24 oz package hash browns or tater tots (I used regular tater tots, you can also use hash browns or thin tater rounds) - DEFROSTED
8 oz shredded cheddar cheese
1 large onion, diced
¼ cup melted butter
2 packages Jimmy Dean sausage (I used reduced fat, Rhonda used maple)

Salt and pepper to taste

On stovetop high cook the onions and sausage breaking sausage into small pieces


In a bowl, beat eggs and add butter and milk to them


Turn the Ninja to the oven setting at 350 degrees

Once sausage is completely browned pour eggs over the sausage



Pour defrosted tots over the egg and sausage mixture


Top with the cheese


Cover and cook for about 15-17 minutes

Chicken, Rice & Veggie Bake

This is a version of the one on the Campbell's Soup website that I have been making in the oven for years!  It turned out good, except that the rice stuck a bit on the bottom and got really crispy, but it was still yummy!

Ingredients

4 boneless skinless chicken breasts (I use smallish ones)
1 cup rice
1 can cream of chicken soup (I use the 99% fat free)
1 can chicken broth
1/2 bag frozen broccoli
1/2 bag frozen mixed veggies
salt, pepper and garlic salt to taste

Set the Ninja to oven 375.

Put rice, both cans of soup, and the spices in the pot and stir


Put a little salt and pepper on the chicken and add it to the mixture

add veggies to the pot and stir a bit (I forgot to take a picture)

Cook for about 40 minutes, although I think next time I will do a little less

Turkey Cheddar Meatloaf

Made my popular turkey cheddar meatloaf in the Ninja tonight!

Ingredients

2 lbs ground turkey
1 cup breadcrumbs
1 egg
1 packet ranch dressing powder
A dash of salt, pepper and Creole seasoning
4-6 oz sharp cheddar cheese (not shredded, a block)



In a big bowl stir everything together but the cheese




Cut the cheese into chunks

Spray a loaf pan with cooking spray

Once meatloaf is in the pan, press into the meat mixture the chunks of cheese, making sure they are buried in the meat.



Cook on Oven setting 425 for about an hour.


I served it with mashed potatoes and broccoli



Upside Down Mac and Cheese

I was very excited to make this as we all love mac and cheese in this house!  It seemed like it would be easy!  The cookbook said prep time was 15 minutes and cooking time was 20 minutes so I figured why not give it a try.

Well...the prep time actually took over and hour and the cook time was about 30 minutes and I still felt like it could cook longer.  It was good, but not amazing and not worth the prep time and the mess.  I probably wouldn't make this version of mac and cheese again.

Ingredients

4 cups water
1 lb uncooked elbow macaroni
3/4  cup butter
6 tablespoons flour
5 cups milk
6 3/4 shredded cheddar
1/2 cup parmesan
salt and pepper
cooking spray
1 1/2 cups breadcrumbs


Turn the Ninja to stove top high and add the water, once it boils add the pasta and cook for about 9 minutes or until just tender


Drain noodles in a colander and reserve the water

Add 1/2 cup butter to the pot and turn to medium.  Once melted, add the flour and stir.  Cook for about 3 minutes



Add milk and heat to a boil, stirring constantly, cook until thick and smooth


Stir in 6 cups of the cheddar, 1/4 cup of the parm and salt and pepper, stir until cheese is melted

In a large bowl stir macaroni, cheese mixture and 1 cup of the reserveed noodle water together

Melt the remaining 1/4 cup butter and in a bowl mix that with the breadcrumbs, 3/4 cups cheddar and 1/4 cup parm

Rinse out the pot and wipe dry.  Take the dry mixture and place it in the bottom of the pot and press it in and up a little on the sides

Add the macaroni mixture to the pot and cook on 350 for 20 minutes (i did 30)

This is how it looked when done

It was ok!
