Cheesy Chicken with Wild Rice and Broccoli

This turned out to be super yummy!

Ingredients:

1 lb skinless boneless chicken breast
Olive oil
Steak seasoning
2 boxes Rice a Roni long grain and wild rice
2 cans Progresso 3 Cheese starter sauce
1 bag frozen broccoli
A little bit of water


Turn the Ninja to stove top high
Add olive oil
coat chicken with steak seasoning
brown the chicken for about 10 minutes


add rice and the seasoning packets with the rice, the Progresso and I added about a half cup of water


Stir then add broccoli

Turn the Ninja to Oven 350 and cook for about 30 minutes

Red Beans and Rice

This is a recipe I made myself based off of one I saw online.  It was good, not too spicy, but something was missing, I can't quite figure out what, but next time I make it I may have to add some other spice as well.

Ingredients:

1 bag small dried red beans (rinsed)
1 pound sausage (i used turkey kielbasa, but you could use anduille, etc...)
7 cups of water
4 cloves of garlic, chopped
3 tablespoons creole seasoning
onion & green bell pepper (I didn't have any so made it without)
hot cooked rice

Put beans, water, creole seasoning, sausage and garlic on Slow Cooker low for 9 hours


serve over hot cooked rice

Mediterranean Chicken

This is my version of a recipe I saw online.  I like to experiment and I actually don’t like following recipes exactly (unless I’m baking)!

Ingredients:

4 boneless skinless chicken breasts
Olive oil
Steak seasoning
1 can (14.5 oz) diced tomatoes
1 can green olives, drained
1 can garbonzo beans, drained
1 8oz package crumbled feta
Bunch of basil leaves

Turn Ninja to stove top high, add oil and chicken breasts seasoned with the steak seasoning

Brown on both sides

Add the tomatoes, olives, garbonzo beans, feta and basil leaves



Turn Ninja to Slow Cooker and cook for 6 hours




Can be served with couscous, rice or noodles.  I made noodles since I had those in the pantry.

Tina's Chicken throw together dinner

I threw this together and it was fantastic!!

Ingredients:

2 large boneless skinless chicken breasts cut in half
Olive oil
Steak seasoning
1 bag (16oz) elbow macaroni
2 cans cream of chicken soup
4 cups liquid (I used 2 cups chicken stock, 2 cups of water)
1 bag frozen broccoli

Set Ninja to stovetop high, add some olive oil and  the chicken (which I put steak seasoning on )

Brown for about 10 minutes, turning the chicken to get all sides browned



Add macaroni, soup and liquid and stir

Add broccoli



Put lid on and cook for 15 minutes on high, stir and put on low and cook for about another 15-20 minutes

Tina's Beef Stroganoff

I should start by saying that when I do my own recipes I don’t really measure, I kinda just do what looks good, just be warned lol!!

Ingredients:

1 lb beef chunks, stew meat, fajita meat, etc…
Steak seasoning
Olive oil
2 cans cream of mushroom soup 
1 pouch onion soup mix
About 1 cup beef stock (or water)
About 1 cup sour cream (I use light)
Wide egg noodles

Set Ninja to stovetop high and add olive oil, meat and steak seasoning.  Brown.

In a bowl stir together soup, onion soup, and stock

Once meat is brown, add soup mixture to the Ninja and stir.  Turn to low and let that cook for about 15 minutes.

Boil noodles on the stove and drain.

Add sour cream and noodles to the Ninja and stir.  I switched the Ninja to crockpot low and set it for 30 minutes, so it would stay warm until we were ready to eat.

Chili with Corn Bread Crust

This is from the Ninja cookbook

Ingredients:

1 1/2 lbs ground turkey
1 tablespoon oil
1 onion, diced
1 green bell pepper, diced
1 tablespoon chili powder
1/2 teaspoon cinnamon
1 28 oz can diced tomatoes
1 can kidney beans, drained
1 tablespoon tomato paste
1 box corn muffin mix
1 egg
1/3 cup milk

Set Ninja to stove top high and add the oil, veggies and meat and brown
Net add chili powder and cinnamon and cook for another 5 minutes
add tomatoes, beans and paste, stir
set to Crockpot High and cook for 4 hours
in a small bowl, mix cornbread mix, egg and milk and after 4 hours spoon onto chili, cook an additional 30 minutes!

Buffalo Chicken Stew

Ingredients:

1 ½ lbs chicken breast, cubed
1 packet Hidden Valley Ranch dressing mix
4 large red potatoes, cubed
1 cup chopped celery
1 cup chopped carrots
1 medium onion, chopped
6 cloves of garlic, minced
6 cups chicken stock
2/3 cups bottled hot wing sauce
Shredded mozzarella for topping
Crumbled blue cheese for topping

Put  chicken, potatoes, carrots, celery, onion and garlic in pot and stir.
Sprinkle ranch mix over everything
Add chicken stock and wing sauce and stir
Set Ninja to Slowcoker Low and cook for 9 hours
Add cheese to individual bowls

I also made rice to have underneath the stew

Basil Parmesan Chicken, Broccoli and rice bake

This is my creation based off of a Campbell's Soup recipe.

Ingredients:
2 large chicken breasts, cut in half for 4 servings
Steak seasoning
14 oz bag frozen broccoli
1 1/3 cups rice
1 can Progresso Recipe Starter Basil Parmesan
1 1/2 cans of water (use the progresso can)
½ cup shredded cheese of choice to sprinkle on top

Put rice in the pot and stir in the Progresso starter and 2 cans of water






Add the frozen broccoli and stir


Season chicken breasts with steak seasoning and add to the pot


Put Ninja on Oven 350 and cook for about 35-40 minutes

Turn the Ninja off, add the cheese to the top, and return the lid until ready to eat

Hearty Beef Stew

This was delicious!!!

Ingredients:

2 lbs beef stew meat
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup flour
2 tablespoons vegetable oil
1 1/2 cups beef broth
4 red potatoes, cut in half
2 onions, cut in quarters
1 cup baby carrots
4 cloves of garlic, chopped
1 teaspoon dried thyme
1 cup frozen peas

Season the beef with salt and pepper and coat with flour

Pour oil into the pot.  Set to stovetop high and heat oil.  Add beef and cook, uncovered, for about 10 minutes or until beef is browned

Stir broth, onions, potatoes, carrots, thyme, and garlic in pot.  Set to slow cook low for 7-9 hours (I did 9).Stir in peas during last 10 minutes of cooking time.
