Tina's version of Jambalaya

Ingredients:
1 ½ pounds sliced spicy sausage
2 cup white rice
4 cups of liquid (I used a combo of juice from diced tomatoes, tomato sauce and water)
Large can of diced tomatoes
Creole seasoning to taste
Olive oil

Turn Ninja to stovetop high, add olive oil and brown sausage

Add rice, liquid, and diced tomatoes

Cover and cook on high for about 10 minutes then stir and turn to low until rice is done

Add creole seasoning to your taste


It was good, but not exactly the way Jambalaya tastes!  I think Zatarains is much better than my version!  LOL

Chicken & Dumplings

This is my own throw together recipe and it's delicious!

chicken breast cut into about 1 inch pieces
potatoes, quartered, I use a small bag of mixed potatoes
4 or 5 large carrots, cut into 1 inch pieces
2 cans cream of chicken soup
1 can chicken stock
thyme
bisquick and milk

I am not really a measure type person, so this is kind of throw together...

put everything but the bisquick and milk in the Ninja, stir and set on Slow Cook low for 8 hours

about 45 minutes before serving, mix bisquick and milk.  I used about a cup and a half of bisquick and just add milk until the mixture is sort of firm.

Add the bisquick on top, put on the lid and let it go on low for about 45 minutes!

Chicken & Broccoli Pesto Pasta

2 large boneless skinless chicken breasts
Montreal Chicken seasoning
1 box whole wheat elbow noodles
1 bag frozen broccoli florets
1 6oz container pesto
4 cups water
olive oil

Turn Ninja to stovetop high
Add a little olive oil
cut chicken into cubes and sprinkle seasoning on
add to Ninja and brown
add pasta, 4 cups water, and broccoli
cover and let boil until water is absorbed
turn Ninja to buffet and add pesto
stir and let sit until ready to eat


Quick & Easy Meatball Soup

2 boxes stock (I used turkey)
1 bag frozen turkey meatballs
1 bag frozen veggies (I used mixed veggies)
1/2 of a bag of small pasta


Turn Ninja to stovetop high and heat stock to a boil, add the meatballs and let it go for a few minutes, add the veggies and turn down to low. About 8 minutes before ready to eat add the pasta. Super easy and tasty!!
