Tina's Super Easy Chili Mac

This was so easy and yummy!  I don't really measure when I'm experimenting so bear with my measurements...

1 lb lean ground beef
1 box whole wheat elbow noodles
Chili powder
Cumin
Tony's creole seasoning
About 3 1/2 cups vegetable stock
About 2 handfuls of Sharp cheddar cheese

Turn Ninja on stovetop high, add beef and some of the seasonings
Once the beef is no longer pink, add the box of elbows, the stock and more of the seasonings
Cook on high with lid on until pasta is tender and juice is gone
Add shredded cheese, turn to warm, and cover until ready to eat

Taco Spaghetti

OMG this was delish!!!

Makes 8 servings (7 WW points per serving)

Ingredients:

5 oz. dried spaghetti, broken
1 lb. ground beef (or turkey)
3/4 cup water
1 packet taco seasoning mix
11 oz. can whole kernel corn with peppers, drained
1 cup sliced pitted black olives
1 cup colby jack or cheddar, shredded
1/2 cup green salsa
4 oz. can diced green chili peppers, drained

Directions:

Cook pasta according to package directions. Drain.

Turn Ninja on Stovetop high and cook beef/turkey until meat is brown. Drain fat. Stir in water and taco seasoning. Bring to a boil; reduce heat. Simmer uncovered for 2 minutes, stirring occasionally. Stir in cooked pasta, corn, olives, half of the cheese, salsa, and green chili peppers.  Once stirred add the rest of the cheese on top and bake on Oven 300 for about 20 minutes.  Then turn Ninja to buffet ready to serve.


Serve with shredded lettuce, tortilla chips, tomatoes, and sour cream, if desired.

Creamy Chicken & Quinoa

Creamy Chicken & Quinoa (recipe was for the oven, I Ninja-fied it)

Makes 8 Servings (6 WW points per serving)

Ingredients

2 cups reduced sodium chicken broth
1 cup almond milk
1 teaspoon poultry seasoning (I used Montreal Chicken seasoning as I didn’t have poultry seasoning)
½ cup flour
1 cups water
1 cup uncooked quinoa, rinsed (I used a quinoa/wild rice blend I found at the grocery store, it was mostly quinoa
1 pound boneless skinless chicken breasts, cut into chunks
¼ cup shredded cheese (I used cheddar)
3 cups fresh broccoli florets (I only had frozen)
Salt and pepper to taste

Instructions

Turn Ninja to stovetop high.  Bring the chicken broth and ½ cup almond milk to a low boil. Whisk the other ½ cup almond milk with the poultry seasoning and flour; add the mixture to the boiling liquid and whisk until a smooth creamy sauce forms. Do not add to quickly because then it may form chunks. At this point turn the Ninja to Oven 400 degrees.





Add one cup water and quinoa to the Ninja, and stir to combine. Dice the chicken and lay the chicken breast cubes over the top of the quinoa mixture. Sprinkle with the more seasoning if you would like. Bake for 30 minutes. NOTE:  after 15 minutes it was boiling like crazy so I turned the Ninja off for the rest of the process!  It was starting to stick so I stirred it well.


While the casserole is cooking, place the broccoli in boiling water for 1 minute until it turns bright green and then run under cold water to blanch it. Add to the Ninja and stir.


Top with the cheese and bake put the lid back on until ready to serve.

Chicken Enchilada Casserole

Trying a new recipe tonight!

Chicken Enchilada Casserole

Ingredients:

1 lb boneless skinless chicken breast, cut into pieces
1 can red enchilada sauce
1 can green enchilada sauce
20 small corn tortillas cut into quarters (I used my pizza cutter)
1 small can sliced olives
2 cans 98% fat free cream of chicken soup
1 small can diced green chilis
2 cups shredded cheese

To prepare:

Mix together the two cans of enchilada sauce in a small bowl

In another bowl, mix together the soup, olives and green chilis

Add 1/3 of the sauce to the bottom of the ninja

Add ¼ of the tortilla quarters over the sauce

Add 1/3 of the soup mixture, 1/3 of the chicken and 1/4 of the cheese

Start a second layer, sauce, tortillas, soup mix, chicken, cheese

Start a third layer…

Top layer is tortillas only

Set Ninja to slow cook 6 hours.

A few minutes before serving add the remaining cheese on the top to melt.

Makes 8 servings 10 WW points per serving

Lettuce chicken tacos

1 lb chicken breast
2 packets taco seasoning
1 cup water

Cooked these three on slow cooker low for about 8 hours then shredded the chicken.  Served in lettuce bowls with light cheese, light sour cream, Spanish rice and olives!


Shrimp Pasta

1 box whole wheat pasta
1 bag shrimp
1 bag frozen broccoli
Olive oil
Lemon pepper

Threw everything in the Ninja with about 3 cups of water and cooked on stovetop high until the pasta was tender and done.  Added olive oil and lemon pepper at the end to taste!


Pork Roast

Threw together a pork roast, red potatoes, carrots and a can of French Onion Soup!  Cooked it on slow cooker low for 9 hours.  It was so yummy!

Lemon Spaghetti

Ingredients:

1 1/2 lbs boneless, skinless chicken breasts, sliced
1/2 lbs angel hair pasta
4 teaspoons olive oil
2 cloves chopped garlic
10 oz bag of spinach
1 lemon (zest and juice)
salt and pepper to taste

Slice chicken and brown on stovetop high with a touch of olive oil

once cooked through add the bag of spinach

once spinach is cooked down add the pasta and 3 cups of water

let cook until noodles are done

in a small bowl, combine olive oil, garlic, lemon zest and salt and pepper

once pasta, chicken and spinach are ready, add the sauce from the bowl, as well as the juice of the lemon and stir well to combine.

Serves 4
WW points 11 per serving

Tina's version of Jambalaya

Ingredients:
1 ½ pounds sliced spicy sausage
2 cup white rice
4 cups of liquid (I used a combo of juice from diced tomatoes, tomato sauce and water)
Large can of diced tomatoes
Creole seasoning to taste
Olive oil

Turn Ninja to stovetop high, add olive oil and brown sausage

Add rice, liquid, and diced tomatoes

Cover and cook on high for about 10 minutes then stir and turn to low until rice is done

Add creole seasoning to your taste


It was good, but not exactly the way Jambalaya tastes!  I think Zatarains is much better than my version!  LOL

Chicken & Dumplings

This is my own throw together recipe and it's delicious!

chicken breast cut into about 1 inch pieces
potatoes, quartered, I use a small bag of mixed potatoes
4 or 5 large carrots, cut into 1 inch pieces
2 cans cream of chicken soup
1 can chicken stock
thyme
bisquick and milk

I am not really a measure type person, so this is kind of throw together...

put everything but the bisquick and milk in the Ninja, stir and set on Slow Cook low for 8 hours

about 45 minutes before serving, mix bisquick and milk.  I used about a cup and a half of bisquick and just add milk until the mixture is sort of firm.

Add the bisquick on top, put on the lid and let it go on low for about 45 minutes!

Chicken & Broccoli Pesto Pasta

2 large boneless skinless chicken breasts
Montreal Chicken seasoning
1 box whole wheat elbow noodles
1 bag frozen broccoli florets
1 6oz container pesto
4 cups water
olive oil

Turn Ninja to stovetop high
Add a little olive oil
cut chicken into cubes and sprinkle seasoning on
add to Ninja and brown
add pasta, 4 cups water, and broccoli
cover and let boil until water is absorbed
turn Ninja to buffet and add pesto
stir and let sit until ready to eat


Quick & Easy Meatball Soup

2 boxes stock (I used turkey)
1 bag frozen turkey meatballs
1 bag frozen veggies (I used mixed veggies)
1/2 of a bag of small pasta


Turn Ninja to stovetop high and heat stock to a boil, add the meatballs and let it go for a few minutes, add the veggies and turn down to low. About 8 minutes before ready to eat add the pasta. Super easy and tasty!!

Italian Chicken

Ingredients:

1 lb chicken breast, sliced
Olive oil
8 oz cream cheese softened
1 packed dry Italian dressing mix
2 cans cream of chicken soup
1 package frozen broccoli
Noodles

Turn Ninja to stove top high

Add oil and chicken and cook chicken for about 10 minutes
Add soup, Italian dressing and cream cheese, stir


Add frozen broccoli, stir


Add lid and cook for about 10-15 minutes



I served over noodles I boiled on the stove.  Since it was my first time making it I didn't try doing the noodles in the Ninja but I'm sure it would work!

Easy Ramen Dinner

This is my 7 year old niece's favorite dinner!  It's easy and cheap!!

Ingredients:

1 lb ground beef or ground turkey
3 packages beef or chicken ramen noodles (I use the chicken when using ground turkey)
5 cups water
1 bag frozen mixed veggies

Turn Ninja on stovetop high

Brown meat, drain


Add ramen, ramen seasoning packet and water and stir


Stir in bag of veggies


Put lid on and cook for about 5-10 minutes or until noodles are tender

So easy!!!!

Sausage, Ravioli and Spinach Bake

This turned out so good!!!  A keeper for sure!!!

Ingredients:

14oz package sausage, sliced (I used turkey kielbasa)
2 packages fresh ravioli (any kind, I used sausage and cheese, large raviolis)
1 jar pasta sauce ( I used Hunt’s garlic herb)
2 big handfuls of fresh spinach
Olive oil
4 cloves garlic, chopped
2 cups shredded cheese

Turn Ninja to stovetop high, add olive oil, garlic and sausage and brown the sausage



Add ravioli and sauce, stir, turn Ninja to Oven 350 and bake for 15 minutes



Turn to warm (buffet) and add spinach and 1 cup cheese, stir





Add remaining cheese to top and put lid on until ready to eat




OMG SO YUMMY!!!!

Cheesy Broccoli, Rice & Sausage

So yummy!!!

Ingredients:

1 lb sausage, sliced (I used turkey kielbasa)
Olive oil
2 cups rice
1 can chicken broth
2 cups water
2 cans 98% fat free broccoli cheese soup
1 bag of frozen broccoli

Turn the Ninja to stove top high, add some olive oil and brown the sausage


Add the rice, broth, water and soup and stir




Add the broccoli

Turn the Ninja to stove top medium and cook for 15 minutes

Stir


Turn the Ninja to low and cook for another 10-15 minutes

Tater Tot Casserole

Ingredients:
1 ½ lbs ground turkey
Steak seasoning
2 cans cream of chicken soup
1 can evap milk
1 bag frozen tater tots
1 cup shredded cheese

Set Ninja to stove top high

Add turkey and steak seasoning and brown the turkey


In a separate bowl mix the soup and evap milk together


Add tater tots on top of the meat


Pour the soup mixture over it


Set Ninja to Oven 400 and cook for 30 minutes


Reduce heat to 250, add shredded cheese, and continue cooking until ready to eat

Cheesy Chicken with Wild Rice and Broccoli

This turned out to be super yummy!

Ingredients:

1 lb skinless boneless chicken breast
Olive oil
Steak seasoning
2 boxes Rice a Roni long grain and wild rice
2 cans Progresso 3 Cheese starter sauce
1 bag frozen broccoli
A little bit of water


Turn the Ninja to stove top high
Add olive oil
coat chicken with steak seasoning
brown the chicken for about 10 minutes


add rice and the seasoning packets with the rice, the Progresso and I added about a half cup of water


Stir then add broccoli

Turn the Ninja to Oven 350 and cook for about 30 minutes

Red Beans and Rice

This is a recipe I made myself based off of one I saw online.  It was good, not too spicy, but something was missing, I can't quite figure out what, but next time I make it I may have to add some other spice as well.

Ingredients:

1 bag small dried red beans (rinsed)
1 pound sausage (i used turkey kielbasa, but you could use anduille, etc...)
7 cups of water
4 cloves of garlic, chopped
3 tablespoons creole seasoning
onion & green bell pepper (I didn't have any so made it without)
hot cooked rice

Put beans, water, creole seasoning, sausage and garlic on Slow Cooker low for 9 hours


serve over hot cooked rice

Mediterranean Chicken

This is my version of a recipe I saw online.  I like to experiment and I actually don’t like following recipes exactly (unless I’m baking)!

Ingredients:

4 boneless skinless chicken breasts
Olive oil
Steak seasoning
1 can (14.5 oz) diced tomatoes
1 can green olives, drained
1 can garbonzo beans, drained
1 8oz package crumbled feta
Bunch of basil leaves

Turn Ninja to stove top high, add oil and chicken breasts seasoned with the steak seasoning

Brown on both sides

Add the tomatoes, olives, garbonzo beans, feta and basil leaves



Turn Ninja to Slow Cooker and cook for 6 hours




Can be served with couscous, rice or noodles.  I made noodles since I had those in the pantry.

Tina's Chicken throw together dinner

I threw this together and it was fantastic!!

Ingredients:

2 large boneless skinless chicken breasts cut in half
Olive oil
Steak seasoning
1 bag (16oz) elbow macaroni
2 cans cream of chicken soup
4 cups liquid (I used 2 cups chicken stock, 2 cups of water)
1 bag frozen broccoli

Set Ninja to stovetop high, add some olive oil and  the chicken (which I put steak seasoning on )

Brown for about 10 minutes, turning the chicken to get all sides browned



Add macaroni, soup and liquid and stir

Add broccoli



Put lid on and cook for 15 minutes on high, stir and put on low and cook for about another 15-20 minutes
