Bacon Brussel Sprout Gratin

Ingredients:

4 tablespoons butter
2 pounds Brussel sprouts, rough ends cut off
1 lb bacon
Pinch or two of red pepper flakes
Salt and pepper
1 cup heavy cream
1 cup (or more if you like) shredded cheese (I used Colby Jack)
1 cup breadcrumbs

In one Ninja I fried up the bacon and in the other I brought water to a boil and cooked the sprouts for about 7 minutes.  You can do the sprouts on the stove while the bacon cooks in your ninja.

Chop up the crispy bacon
Rough chop the sprouts (I cut most into 4ths)

Put the sprouts, half of the bacon, red pepper flakes and salt and pepper in the Ninja and stir

Add the cream, cheese, breadcrumbs then bacon and add the butter all over the top of the breadcrumbs in small chunks

Set Ninja to Slowcook high and cook for about 2 hours then switch to warm

Delicious!!!  Everyone really liked it.

Broccoli cheese soup



1 bag broccoli florets
3 cans cheddar cheese soup
1 box low sodium chicken broth
2 cups half and half
2 cups shredded sharp cheddar
Garlic powder, pepper and cayenne pepper to taste

Steam broccoli in the ninja for 20 minutes, transfer to a bowl and smash up a bit
Turn ninja to stovetop high
Add soup, broth, cream and spices and stir and bring to a boil
Add shredded cheese and stir until melted all the way
Add broccoli and stir
Turn ninja to stovetop low and let simmer until ready to eat

Bacon Cheeseburger Soup

12 oz thick cut bacon
1 lb lean ground beef
1/4 cup flour
1 tablespoon Montreal Steak Seasoning
2 teaspoons paprika
4 cups half and half
12 oz beer
16 oz shredded cheddar cheese
Salt to taste

Set Ninja on stovetop high
Chop bacon and cook until lightly crips
Add the beef and brown
Drain the meat mixture (all but about two tablespoons of the fat)
Add seasonings and flour, mix to coat
Add the beer, stir and cook about 5 minutes (it will thicken)
Add the half and half, stir and cook until bubbles start to form
Turn Ninja to warm and add the cheese
Stir until the cheese is all melted
Taste, add salt if needed 

This was very tasty!  My sister said it reminded her of a chowder so next time I may add potatoes to the mix!!

Beef and sausage Alfredo

1lb lean hamburger
1lb spicy sausage
1 bag frozen broccoli (cook in micro for about 3 minutes)
2 jars Alfredo sauce
1 cup shredded cheese
Garlic salt and black pepper

Set Ninja on stovetop high and brown hamburger and sausage, with garlic salt and pepper
Drain
Add broccoli and Alfredo sauce, stir
Turn Ninja to oven 350 and cook for 10 minutes
Turn Ninja off, add shredded cheese, let sit for a few minutes

Low carb green chile chicken enchilada casserole

1lb boneless skinless chicken breast
1 large can green enchilada sauce
1 can sliced olives
1 can diced green chiles
2 cups shredded cheese
6 low carb flour tortillas
Some hot sauce
Chicken stock

Put chicken and stock in the Ninja and slowcook low for 5 hours
In a bowl shred the chicken and add olives, chilies, and hot sauce
In the Ninja, put a little sauce and two of the tortillas, add some meat mixture and cheese
Do two more layers
Add the rest of the green sauce to the Ninja
I cooked this on slowcook high for an hour

Next time I would try baking on a low temp.  The tortillas cooked but were a bit soft (soggy).  It was still delicious though!!!

I also added sour cream on top!

Chicken Broccoli Bake

3 chicken breasts, cooked and then shredded (I put frozen breasts and chicken broth in the Ninja on slowcook for 6 hours then shredded when I got home)
16 oz fresh broccoli, steamed for 10 minutes
2 cans cream of chicken
1 1/2 cups shredded cheese
Spices to taste- I used adobo on the chicken and garlic salt and pepper on the broccoli

Once chicken and broccoli are cooked mix everything together and bake in the oven for 20 minutes on 425.

Greek stuffed chicken and cauliflower 'rice'

For the chicken:

4 boneless skinless chicken breasts
1 bottle Italian dressing
Marinate for a few hours in a zip bag

For the stuffing:

Mediterranean feta cheese chopped up
Kalmetta olives chopped
Spinach chopped

Butterfly the chicken, add stuffing and close up with toothpicks (I only had large skewers so I used that)

Turn ninja to stovetop high and add some olive oil
Once hot place chicken in and put the lid on
Cook for 25 minutes - remove toothpicks
Add more stuffing and cook for 5 more minutes

Cauliflower 'rice'

Cut up one head of cauliflower and pulse in a food processor until rice like
Spread on a cookie sheet
Drizzle with olive oil and add salt and pepper
I also added oregano since I was making Greek chicken
Bake for 5 minutes at 450
Stir and re-spread
Bake for 5 more minutes

Low Carb Pepperoni Pizza Chicken


8 frozen chicken breasts, thawed and pounded out a bit
1 small jar pizza sauce
1 cup shredded cheese
1 package pepperoni (I used the smaller ones and the spicy hot)
1 can sliced olives
Salt
Pepper
Italian seasoning
Oregano
Olive oil

Set Ninja on stovetop high
Season one side of the chicken
Add olive oil to the pot and add the chicken seasoned side down
Season other side of chicken
Brown for about 5 minutes on each side
Add sauce, cheese, pepperoni and olives
Turn Ninja to stovetop low, put the lid on and cook for 30 minutes

I served it in bowls as it was a bit saucy!  Next time I might use a thicker sauce but it was still yum!

Delicious!!!

Frittata


Ingredients:

12 turkey sausage links cut into small pieces
2 cups broccoli florets cut into small pieces
Large handful of spinach chopped up
12 eggs
Splash of hot sauce and a bit of half and half
Garlic salt
Garlic pepper
2 large handfuls of shredded cheese

Set Ninja on stovetop high and start browning sausage.  After a few minutes add the broccoli and cook together for a few minutes.  Add the spinach and continue cooking for a few minutes.

Beat eggs, half and half, hot sauce and salt and pepper

Add the cheese to the eggs, stir and pour over the meat/veggie mixture

Turn Ninja to Oven 400 and put lid on

Cook for about 15 minutes

Tortilla-less Chicken Enchilada Bake

2 large boneless chicken breasts cut into about 1 inch pieces
1 large can hot enchilada sauce
1 can sliced olives
Shredded cheese to your liking

Set Ninja on stovetop high
Add a tiny bit of olive oil and cook chicken until no longer pink
Add the sauce and olives and turn to Low, put lid on and let cook for about 15 minutes
Add the cheese on top, put the lid on for a few to let the cheese melt
Serve over rice

I am on a low carb diet so I made rice for the family and I will have mine with broccoli!!

Enchilada Bake

I found a recipe online that I adapted to be my own.  Please remember I am not a big measurer (is that a word).  I tend to wing it!  This was delicious

1 pound lean ground beef
1 can corn
1 can olives (I had whole and cut them in half)
1 can diced tomatoes
3 cans mild enchilada sauce
Shredded cheese
Corn tortillas
Chili powder
Garlic pepper
Garlic salt

Turn Ninja to stovetop high, once heated up add beef and spices and brown
Pour meat mixture into a big bowl and stir in corn, olives and tomatoes
Turn Ninja to slowcook high
Cover bottom of ninja with tortillas, overlapping to fill the bottom
Add about 1/4 of the meat mixture and a handful of cheese
Do this layering 3 more times, ending with meat mixture and cheese
Poor all of the sauce over everything in the pot and cook on high for about an hour

Hamburger and Potato Casserole

Ingredients 

1 pound ground beef
3 cups thinly sliced red potatoes
1 can cream of mushroom soup
3/4 cups milk
1 1/2 cups shredded cheese
Salt and pepper to taste

Turn Ninja to stovetop high and brown the hamburger

While the hamburger is browning, in a bowl mix together soup, milk and salt and pepper

Remove the hamburger, drain

Turn Ninja to low stovetop

Layer 1/2 of the potatoes, then half the soup, half the cheese and half the hamburger

Repeat with another layer

Cook until potatoes are tender.

Cheesy Chicken and Broccoli Pasta

Ingredients 

8oz any shape pasta 
3 cups broccoli florets
3 tablespoons olive oil
1 pound chicken breast cut into 1 inch pieces
1 cup milk
1 cup chicken broth
1/4 cup flour
Salt, pepper and chili powder to taste
1 cup shredded cheese
2 cups of water

Turn Ninja to stove top high, add olive oil and brown the chicken

Add the pasta and two cups of water

Cover and let pasta boil

In a bowl combine milk, chicken broth, flour, salt, pepper and chili powder

Once pasta is done, Turn Ninja down to stovetop low

add the broccoli (if you use frozen broccoli add it in with the pasta to cook through) and add the liquid to the ninja and stir. 

Let that cook on low for about 10 minutes.

Add the cheese, let it melt for a few minutes and serve!!

Potato and Corn Chowder

Ingredients

  • 24 ounces red potato, diced 
  • 1 (16-ounce) package frozen corn 
  • 3 tablespoons all-purpose flour 
  • 6 cups chicken stock 
  • 1 teaspoon dried thyme 
  • 1 teaspoon dried oregano 
  • 1/2 teaspoon garlic powder 
  • 1/2 teaspoon onion powder 
  • Kosher salt and freshly ground black pepper, to taste 
  • 2 tablespoons unsalted butter 
  • 1/4 cup heavy cream

Instructions

  • Place potatoes and corn into the Ninja. Stir in flour and gently toss to combine. Stir in chicken stock, thyme, oregano, garlic powder, onion powder, salt and pepper, to taste. 
  • Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
  • Stir in butter and heavy cream.
  • Serve immediately.

Cheesy Chicken, Broccoli and Rice

Ingredients
  • 3 tablespoons extra virgin olive oil
  • 1 1/2 pounds boneless skinless chicken breasts, cut into bite sized pieces
  • 2 cloves of garlic, minced
  • 1 teaspoon salt and pepper to taste
  • 2 cups uncooked extra long grain white rice
  • 3 cups broccoli florets, cut into bite sized pieces
  • 4 cups of low-sodium chicken broth
  • 2 cups shredded extra sharp cheddar cheese

Instructions

  1. Set Ninja to stovetop high and add some of the olive oil. Season chicken with salt and pepper.
  2. add chicken and brown, then add the garlic.  Cook for about 1 more minute.
  3. Push chicken to one side of the pan and add additional tablespoon of olive oil to other side.
  4. Add the uncooked rice in the olive oil and saute it for a couple of minutes.
  5. Add the chicken broth to the pan and bring the mixture to a boil.
  6. Cook chicken and rice mixture covered for about 12 minutes.
  7. Add the broccoli and stir to combine.
  8. Continue to cook covered another 8 minutes or until broccoli and rice are both tender.
  9. Turn the Ninja off and stir in half a cup of cheese.
  10. Sprinkle remaining cheese on top and cover with a lid, letting it sit for 1-2 minutes or until cheese has melted.

Throw Together meatball soup

Tonight I made another super easy, fast and tasty soup!

Turn Ninja on stovetop high and add 2 boxes of beef stock, a bag of frozen veggies, frozen meatballs and cubed potatoes.

After about 30 minutes I threw in some noodles and cooked another 15 minutes.

Added a bit of salt and pepper at the end

Ground Beef burrito bowls

I love to throw things together!  Normally I make this recipe with chicken but I didn't have any so I created something new in my reportoire!

1 pound lean ground beef
Garlic salt
Garlic pepper
Chili powder
1 can of black beans drained
1 can of corn drained
1 bottle of Herdez Chipotle salsa (you can use any kind of salsa) - This is my new favorite salsa!!!
White rice
Shredded cheese

Set Ninja on stovetop high and brown beef along with spices

Add corn, beans and salsa and stir

Turn Ninja to stovetop low and cook for about 30 minutes.

I cooked the rice in a pot on my stove since I haven't tried steaming rice on its own yet in the Ninja!

Put some rice in a bowl, add the meat mixture and top with shredded cheese!

Paprika chicken and rice bake

2 large chicken breasts cut in half
2 cups white rice
1 box chicken broth
1 bag frozen broccoli and cauliflower
Salt, pepper and paprika to taste

Set Ninja to oven 350

Put rice, stock, chicken and veggies in the Ninja and add plenty of paprika and a bit of salt and pepper

Cook for about 45 minutes or until rice is done.

Cheeseburger Flatbread Melts

This is a two Ninja recipe.  If you only have one you can either cook the flatbread on the stove in a pan or remove the meat mixture from the Ninja, wipe clean and do the flatbreads in the Ninja

Ingredients:

1 pound lean ground beef
1 packet onion soup mix
1/2 cup water
1/4 cup catsup
2 tablespoons yellow mustard
2 cloves of garlic chopped
1 can refrigerated thin crust pizza dough
Shredded cheese

In the Ninja on stovetop high, brown the ground beef (drain if not using lean beef)

Add onion soup mix, catsup, mustard, garlic, and water, stir well then set Ninja to low to cook through and simmer

In the other Ninja, set it to stove top high

While its heating up, take dough out of the container and cut into 6 pieces

Once the Ninja is nice and hot add two pieces of the dough in and cook until brown on both sides

Add meat mixture to each flatbread as well as cheese

When you eat it just fold it up and eat kind of like a taco!  No utensils needed!!

Country Style Pork Ribs with potatoes and green beans


I wanted to do a pork roast but my store didn't have any so I bought some boneless pork ribs! 

1.3 lbs of country style boneless pork ribs
1 envelope herb and garlic soup mix
6 medium size white potatoes cubed
2 cans green beans (they didn't have fresh at the store)
1 cup water

Put the ribs in the Ninja and covered them with half of the soup mix

Add the potatoes and use the rest of the soup mix

Cook on Slowcook low for about 5 1/2 to 6 hours.

Add the green beans during the last half hour of cooking

I ended up cooking it for 5 1/2 hours, adding the beans at 5 hours and it was perfect!!

Throw Together Hamburger Soup

As usual, I love to just get creative and use up what I have in the kitchen.  So tonight I decided to make this...

1 lb lean hamburger
Red potatoes (I cut up about 6 medium sized ones)
2 boxes beef broth
1 can diced tomatoes
1 bag frozen broccoli and cauliflower
Spices to taste (I used creole seasoning, pepper and oregano)

Set the Ninja to stovetop high and brown beef with some spices

Add potatoes, stock and diced tomatoes, bring to a boil then turn Ninja to stovetop low

I checked the potatoes and they were almost done about 40 minutes in so I then added the veggies and let it cook until we were ready to eat.

This is the kind of soup you just kind of watch, I don't think you can really over cook it, especially when on low!
