Bacon Brussel Sprout Gratin

Ingredients:

4 tablespoons butter
2 pounds Brussel sprouts, rough ends cut off
1 lb bacon
Pinch or two of red pepper flakes
Salt and pepper
1 cup heavy cream
1 cup (or more if you like) shredded cheese (I used Colby Jack)
1 cup breadcrumbs

In one Ninja I fried up the bacon and in the other I brought water to a boil and cooked the sprouts for about 7 minutes.  You can do the sprouts on the stove while the bacon cooks in your ninja.

Chop up the crispy bacon
Rough chop the sprouts (I cut most into 4ths)

Put the sprouts, half of the bacon, red pepper flakes and salt and pepper in the Ninja and stir

Add the cream, cheese, breadcrumbs then bacon and add the butter all over the top of the breadcrumbs in small chunks

Set Ninja to Slowcook high and cook for about 2 hours then switch to warm

Delicious!!!  Everyone really liked it.

Broccoli cheese soup



1 bag broccoli florets
3 cans cheddar cheese soup
1 box low sodium chicken broth
2 cups half and half
2 cups shredded sharp cheddar
Garlic powder, pepper and cayenne pepper to taste

Steam broccoli in the ninja for 20 minutes, transfer to a bowl and smash up a bit
Turn ninja to stovetop high
Add soup, broth, cream and spices and stir and bring to a boil
Add shredded cheese and stir until melted all the way
Add broccoli and stir
Turn ninja to stovetop low and let simmer until ready to eat

Bacon Cheeseburger Soup

12 oz thick cut bacon
1 lb lean ground beef
1/4 cup flour
1 tablespoon Montreal Steak Seasoning
2 teaspoons paprika
4 cups half and half
12 oz beer
16 oz shredded cheddar cheese
Salt to taste

Set Ninja on stovetop high
Chop bacon and cook until lightly crips
Add the beef and brown
Drain the meat mixture (all but about two tablespoons of the fat)
Add seasonings and flour, mix to coat
Add the beer, stir and cook about 5 minutes (it will thicken)
Add the half and half, stir and cook until bubbles start to form
Turn Ninja to warm and add the cheese
Stir until the cheese is all melted
Taste, add salt if needed 

This was very tasty!  My sister said it reminded her of a chowder so next time I may add potatoes to the mix!!

Beef and sausage Alfredo

1lb lean hamburger
1lb spicy sausage
1 bag frozen broccoli (cook in micro for about 3 minutes)
2 jars Alfredo sauce
1 cup shredded cheese
Garlic salt and black pepper

Set Ninja on stovetop high and brown hamburger and sausage, with garlic salt and pepper
Drain
Add broccoli and Alfredo sauce, stir
Turn Ninja to oven 350 and cook for 10 minutes
Turn Ninja off, add shredded cheese, let sit for a few minutes

Low carb green chile chicken enchilada casserole

1lb boneless skinless chicken breast
1 large can green enchilada sauce
1 can sliced olives
1 can diced green chiles
2 cups shredded cheese
6 low carb flour tortillas
Some hot sauce
Chicken stock

Put chicken and stock in the Ninja and slowcook low for 5 hours
In a bowl shred the chicken and add olives, chilies, and hot sauce
In the Ninja, put a little sauce and two of the tortillas, add some meat mixture and cheese
Do two more layers
Add the rest of the green sauce to the Ninja
I cooked this on slowcook high for an hour

Next time I would try baking on a low temp.  The tortillas cooked but were a bit soft (soggy).  It was still delicious though!!!

I also added sour cream on top!

Chicken Broccoli Bake

3 chicken breasts, cooked and then shredded (I put frozen breasts and chicken broth in the Ninja on slowcook for 6 hours then shredded when I got home)
16 oz fresh broccoli, steamed for 10 minutes
2 cans cream of chicken
1 1/2 cups shredded cheese
Spices to taste- I used adobo on the chicken and garlic salt and pepper on the broccoli

Once chicken and broccoli are cooked mix everything together and bake in the oven for 20 minutes on 425.

Greek stuffed chicken and cauliflower 'rice'

For the chicken:

4 boneless skinless chicken breasts
1 bottle Italian dressing
Marinate for a few hours in a zip bag

For the stuffing:

Mediterranean feta cheese chopped up
Kalmetta olives chopped
Spinach chopped

Butterfly the chicken, add stuffing and close up with toothpicks (I only had large skewers so I used that)

Turn ninja to stovetop high and add some olive oil
Once hot place chicken in and put the lid on
Cook for 25 minutes - remove toothpicks
Add more stuffing and cook for 5 more minutes

Cauliflower 'rice'

Cut up one head of cauliflower and pulse in a food processor until rice like
Spread on a cookie sheet
Drizzle with olive oil and add salt and pepper
I also added oregano since I was making Greek chicken
Bake for 5 minutes at 450
Stir and re-spread
Bake for 5 more minutes
